Analysts from the Russian retail giant Aşan have calculated the preparation costs of the most popular cold soups for 2026. The research revealed that the most economical option is beet soup (svekolnik).
Beet Soup Takes the Lead

According to the analysis, the most expensive item in this soup was the 200 grams of sour cream used for serving, with the cost of this product calculated at 38 rubles.
Costs of Other Cold Soups
Traditional Russian okroshka soup took second place in the cost ranking. For a family of four, these costs were calculated at 198 and 206 rubles, respectively. The most expensive ingredient in this soup was 120 grams of boiled sausage, priced at 40 rubles.
The most costly cold soup was gazpacho, from traditional Spanish cuisine. The cost of one portion of gazpacho was set at 55.75 rubles, and 223 rubles for a family of four. In this soup, 600 grams of tomatoes constitute a large part of the cost, priced at 114 rubles for Aşan customers for that quantity.
The calculations were based on four-portion recipes and the prices of the chain's own-brand products.
